My newest obsession is overnight oats. I have really been enjoying switching it up from my green smoothies to having oats a few days a week. I find that they keep me full for a bit longer..and I pack them with allll the goods. I make a big batch and place it in a large mason jar to last me for the week.
For a quick background, overnight oats are a no-cook method to making oatmeal. Super simple, quick, healthy & a great on-the-go option for breakfast. Oats are packed full of fiber, and by adding some additional healthy fats (like coconut milk) and protein (like a vegan protein powder), this breakfast will keep you full for hours!
2 cups gluten-free rolled oats
3 cups coconut milk, light or full (canned is the best way to go)
2 tablespoons chia seeds
1 tablespoon ground flax seeds
2 teaspoons cinnamon
1 tablespoon almond butter
2 teaspoons vanilla extract
a sprinkle of unsweetened coconut shreds
1 scoop Raw Fit Vegan protein powder (optional)
1 scoop Youtheory Maca powder (optional)
1 scoop Youtheory Collegan powder (optional)
1/2 tablespoon Cacao powder (optional)
a handful of fresh blueberries
Add all of the ingredients (except for the fresh blueberries) into a large mixing bowl and stir well.
Pour the mixture into a large mason jar, close the lid, and place in the refrigerator overnight.
In the morning, or when ready to eat, top with some additional coconut milk (optional, for extra creaminess), cinnamon, and fresh blueberries. *Note: of you are not dairy free, some greek yogurt is a great option here!
